My little Big Girl is turning seven in a couple of weeks. I don’t know how that happened! I swear, I just nursed her and tucked her in the crib, like half an hour ago! I guess it is true… Time does fly… That all-powerful time measured by a ticking device with two skinny, stretched out, evil looking hands, telling away our time (this description does not apply if you have a digital clock).

But I digress. What does time have to do with a simple Fruit and Nut Crumble recipe? Nothing much. Really… Except that I love to eat it, don’t mind making it, and I will prepare it for my little Big Girl’s 7th birthday party she’s been so anxiously asking about.

We plan to celebrate this day with a lot of friends, neighbors, and family over at our house. That has been a tradition in our household. A few of my Big Girl’s classmates will be attending as well, and I really look forward to this mad day of fun, loud noise and yummy foods. But what I really look forward to is seeing her big brown eyes glee with joy and excitement.

Traditionally, we have a cake or two. I usually do not venture into making them, and I’d rather have my mom show off her skills.

I do however, plan to make my favorite nut crumble recipe. This is it in the picture below. It’s easy, delicious, and healthy.

Organic Winter Fruit and Nut Crumble

If you decide to make it you will need:

3 lb/1.3 kg organic apples, peeled, cored and chopped, or a mixture of apples and organic quinces (if available)

1 tbsp water

3 tbsp organic honey

1 3/4 cups of organic blackberries

2 tbsp unsalted organic butter

2 tbsp raw organic brown sugar

3 tbsp organic whole wheat non-bleached all-purpose flour

2 1/3 cups of organic rolled oats

1 tsp ground nutmeg

2 tbsp toasted organic hazelnuts, chopped

organic cream cheese, to serve

Preheat the oven to 375F or 190C. Put the apples in a pan with the water and 1 tablespoon of the honey over medium heat. Cook for 10 minutes. Let cool, then mix with the blackberries. Arrange the fruit mixture in the bottom of a baking dish.

Melt the butter in a small pan over low heat. Let cool slightly. Meanwhile, mix all the remaining ingredients together in a large bowl. Pour in the melted butter and stir to combine. Spoon over the fruit mixture in the dish.
Bake in the preheated over for 30-40 minutes. Serve hot with half-fat cream cheese.

*I try to use as many organic ingredients as possible, especially the fruit and the cheese.
