My Baby Eating Spaghetti

Yes, you’ve heard it before: the early bird may get the worm, but the second mouse gets the cheese.

I admit it, I LOVE to sleep in! It’s effortless to dream my big dreams underneath a down duvet. The only ones who can, and usually do, interrupt those blissful moments are my two kids. They love to snuggle with me under the covers. The Big Girl calls it a “secret cave”, the Baby just tags along. I love to stay there until they drag me out of bed. Or should I say “I used to”… Things have been quite different in my household lately. No more lazy morning for me (unless on weekends and public holidays).

Ever since my Big Girl has started Kindergarten, I wake up early. I have to! There are so many things to do. My mornings now look something like this:

At approximately 6:00 AM, my hubby and I both wake up to a baby crying. He takes him out of the crib, while my brain starts the “what- needs-to-be-done-today” drill. I somehow find the energy to lug myself out of bed. Gee, I wish I could have just one more minute… While my hubby changes the Baby’s diaper, I prepare us breakfast. Then, I feed the hungry Baby before his crankiness escalates into a full-blown tantrum, drag my Big Girl out of bed, carry her to the bathroom, make sure she brushes her teeth, washes her face, etc. I take her to the dining room, seat her at the table, and while she eats her breakfast, I pack her lunch, make sure her library book and homework are in the backpack, get her clothes ready, tie her ponytails, and tie her shoelaces if she’s not in an “independent mood”. Meanwhile my husband is concurrently getting ready for work and entertaining the Baby who wants ATTENTION… OK! You’ve got the picture?!

Preparing breakfast is the least favorite task on my list. It takes time, which I don’t have. So, I’m always on the look-out for some healthy, but easy meals to make.

Believe it or not, my intention in writing this wasn’t to complain, really. My intention was to share with you all a recipe for a scrumptious easy breakfast treat that’s made my mornings deliciously effortless (to a degree). The kids love it and they eat it quietly! Yay! :) So here it is!

Buttered Cinnamon Apples on Fruit Toast


3 tbsp unsalted butter

1 ½ tsp ground cinnamon

3 apples, cored and sliced

3 slices fruit bread

maple syrup, to serve

Melt the butter in a pan over low heat and stir in the cinnamon. Add the apples and stir well to coat.

Preheat the broiler and line the broiler pan with foil. Spread the buttered apple over the broiler pan. Cook under the broiler until the apples are just beginning to brown. Toast the fruit bread and serve with the apples piled on top, drizzled with a little maple syrup.

Instead of fruit bread, you can use waffles as well. Still very tasty and amazing!

Tip: Have a freshly squeezed orange juice with the toast, and try to relax. Yeah, right!  :)

  1. My easiest breakfast trick is what we call toasted peanut butter. Toast slices of whole wheat/multi-grain bread and spread with pb. I probably use a little less than I might use on untoasted bread because it gets a little melty and will get messy if you’re not careful. If I’m feeling particularly creative, I’ll add thin slices of apple or banana and a little sprinkle of cinnamon! It doesn’t really work with jelly/jam/preserves but apple butter works well!

    Obviously, you could trade out some other nut butter (almond, sunflower) or even nutella for the grownups!

      Believe it or not, my kids do not like peanut butter, but they do love Almond butter and I will definitely make it for them tomorrow morning. Then on Friday we’ll have something boring lol. Probably some cheese and crackers, with a freshly squeezed orange juice.

  2. Your mornings sound just like mine! Minus the older kid. As far as quick and easy breakfast foods, I recommend cereal! Works well for dinner too:)

    • Thanks for sharing! :) Cereal is easy, but I still haven’t found a good sugarless cereal that my kids would like. Which one do you buy?
      Just recently I read somewhere that one bowl of Cocoa Puffs has the same amount of sugar as a 50-gram bag of Hershey’s Kisses, and a bowl of Corn Pops is the sugar equivalent of eating a Kit Kat bar.
